Toasted chia ice cream with guava, date caramel, gooseberry and chocolate

Has chia been creeping up on your consciousness in the past couple of years?

Me too, and it’s not an accident. I had an inkling that it was healthy for you–after all, why the sudden appearance in kombucha, puddings, Organic Avenue, and smoothie recipes? This Mexican seed is packed with protein, omega-3, and antioxidants.

And I discovered how many different things you can do with it at a special dinner hosted by Chia Co., an Australian company who’s on a mission to spread the chia gospel to every corner on earth, and the health website Well+Good. You might have started seeing their Chia Pods, little plastic, yogurt-sized cups of chia pudding, in grocery stores in the past couple of months, but they also sell plain chia seeds, chia oil, and ground chia.

Chef Daphne of the supper club SuiteThreeOhSix got incredibly creative with these ingredients, presenting several courses the the guests assembled around the table: cucumber vichyssoise with blood orange, parsley, and spice chia oil; dutch runner beans with ancho pickled radish, quinoa seed granola and lemon whipped cream; white pepper chia mousse with asparagus, cherry tomato and balsamic reduction; smoked carrot risotto with porcini cream, valencia spring onion, jalepeno and chia crisp and for dessert, toasted chia ice cream with guava, date caramel, gooseberry and chocolate.

All the while I could pause my conversation, turn around, and watch them assemble the dishes through the clear glass window to the kitchen. The surprise finish was dark chocolate truffle rolled in chia seeds. I’ve never felt so full and healthy at the same time!

During dinner, John and Kay Foss, founders of The Chia Co., told us their story. They are sure that chia seeds can change the world. Of course, most of the people around the table didn’t need much convincing. For example, Lianna Sugarman, the founder of the juice company LuliTonix, already incorporates chia seed into her juices. Other VIP guests included Alexandra Jamieson, “Super Size Me” co-star and nutrition author; Seamus Mullen, chef-owner of Tertulia, and his wife Lynn Juang; Keri Glassman, celebrity nutritionist; Genevieve Lynch, co-founder of the healthy TriBeCa restaurant Mulberry and Vine; Cristina Tudino, Women’s Editor at Birchbox; Nitika Chopra, host of “Naturally Beautiful” on Veria Living TV and founder of Bella Life; and Millana Snow, model winner of Project Runway and TV Host. I was seated next to Melisse Gelula and Alexia Brue, founders of Well+Good.
